Abstract
The book is made up of a series of chapters organized in a coherent manner, beginning with the conceptual-theoretical part, followed by empirical studies of specific products under the Localized Agri-food Systems approach (Sial). It has 14 chapters and an introduction, divided into four parts: 1) the Sial category; 2) quality certifications; 3) territorial identity of artisanal cheeses; 4) collective action and institutions in territorial integration; and, ethical dilemmas in fair trade networks.
A fact that stands out is the participation in this work of researchers from five countries (México, France, Spain, Argentina and the United States) that belong to nine teaching and research institutions.
